Date and nut energy bars and chia seed energy bars recipe

OK, so what you see in the picture below is not a turd. It is in fact an easy to make snack that is soooo darn nutritious, it’s practically virtuous. I present to you my date and nut energy bars, and my chia seed energy bars.

No marks for presentation. In fact they’re not even bars. It’s more of a splat. But these date and nut energy bars and chia seed bars are a much better snack than reaching for the Snickers. The dates are so full of goodness that it is the snack of choice during Ramadan. Plus coconut oil full of good fat.

Throw in with the almonds and cashew nuts, and you have an amazing energy boost in a pooh-like bar. And the other bars, made with chia seeds, are amazing. In fact one tablespoon of chia seeds has more calcium than a glass of milk, and more Omega-3s than Salmon. It’s no wonder ancient Aztec warriors would opt for chia seeds to sustain them during battle.

And while I’m not going to war anytime soon, I do have a two-month old baby to entertain. So I need all the energy I can get. So if you need a boost, here’s my recipe for date and nut energy bars, and chia seed energy bars.

Date and nut energy bars recipe

Ingredients for date and nut energy bars

  • 4 plump dates (I opt for Medjoul, which are the Rolls Royce of dates)
  • 1tbsp organic extra virgin coconut oil
  • Handful of almonds and cashew nuts
  • ½ tsp organic cacao powder (optional)
  • Pinch cinnamon powder


For chia seed energy bars:

  • Swap the nuts for a tbsp of chia seeds


Date and nut energy bars method

Crush the nuts in a blender

Add the dates into the blender along with the cinnamon and cacao powder if you’re using

Then combine the mix with the coconut oil in a bowl

Spread the mixture over a sheet of grease proof paper

Leave in the fridge for 20 minutes to harden slightly (though it should still be chewy)

Cut into pieces and devour
