Easy Shakshuka recipe – Turkish aubergine (eggplant) with an Asian twist

So I recently sampled a Turkish delicacy – shakshuka – which is essentially a slow cooked tomato-y aubergine (or eggplant) dish. It has a great, rich flavor and is perfect accompanied with bread.

Of course, I had to give it my own Asian twist, as the authentic shakshuka is a little sweet for my liking. However, if you’re not as Desi as me, you can omit the curry powder.

Oh, and I cut a few corners. The original recipe requires you to fry off the aubergines first. I didn’t fancy that, as the extra cooking time – not to mention the excessive oil – put me off. So I threw the veg straight in and it seemed fine.

There are of course ‘real’ shakshuka recipes out there, but if you want a delicious cheat version, I’m your girl.

Easy Shakshuka Recipe – Turkish Aubergine, with my Asian Twist

Ingredients

2 large aubergines (eggplants), cut into 1inch cubes
1 green bell pepper, chopped into 1inch cubes
1 red bell pepper, chopped into 1inch cubes
1 medium onion, diced finely
1 courgette (zucchini)
3 cloves garlic, chopped finely
100ml tomato passata
1 tsp salt, more or less to taste
¼ tsp black pepper, more or less to taste
½ tsp curry powder
2 tbsp tomato paste
Squeeze of lemon juice
2 tbsp olive oil

Method

In a colander, add the aubergine chunks and sprinkle with salt.

Set aside for around 15 minutes, this will allow the aubergine to drain and
lose some of its bitterness.

In a saucepan, add the onions to some olive oil and allow to
sautee. Throw in the garlic so it can brown.

Sprinkle in some salt and pepper.

This is where it gets a bit Asian… add in the curry powder (totally optional but I do like the kick).

Add in the aubergine, peppers and courgettes and stir.

Pour in the pasatta.

Squeeze in the lemon juice.

Stir and let simmer over a low heat with the pan covered.

Continue to cook slowly, stirring occasionally, until the shakshuka
has thickened.

And that is that. Use as a dip, a side dish or a main meal if
you’re going veggie.
