Ok, so this is quite possible the most unashamedly easy dish I have made so far this Ramadan, but boy does it hit the spot. I actually got inspired to make and share this masala chilli cheese on toast recipe after visiting Dishoom restaursnt in Shoreditch, where they served a retro style cheese on toast with an Asian twist.

, but in the meanwhile, I wanted to share this easy, tasty and filling dish, which will satisfy the hungriest of tummies.

Ingredients for masala chilli cheese on toast
Four slices of granary bread
Two handfuls of grated cheese
Half an onion, diced
Pinch of black pepper
Some chopped coriander
1 green chilli, diced finely
Optional – a pinch of cumin powder, and curry powder
Method for masala chilli cheese on toast
In a bowl, mix the grated cheese, chilli, coriander and black pepper.
Now this stage is optional, but for a real desi twist, you could fry off the onions in a little of the cumin and curry powder, then add this to the grated cheese mix. If you don’t want to fry off the onions, you could add straight to the cheese without frying and omit the spices.
Then, put the slices of bread on an oven tray, and grill them for a minute or so, until they become crisp.
Finally, take out the bread, spread on the cheese mix, and grill again for a few minutes until the cheese is bubbling.
And it’s as easy as that – spicy, chilli cheese on toast.
