Jamie Oliver chickpea salad recipe (with a twist)

And here’s what I had…

It’s a Jamie Oliver inspired chickpea and feta salad, which is filling enough, whilst also packing a flavoursome punch. I’ve modified the original recipe slightly by adding beetroot, which adds a nice tang and some colour. You can add also add peppers, coriander, celery, pickled garlic or olives. You can essentially dress it up or down as much as you like.
So here’s how you do it…
Ingredients:
1 can of chickpeas
Half an onion, diced
60g feta cheese, crumbled into small pieces
8 cherry tomatoes, quartered
Quarter of a cucumber, diced
Quarter of a cucumber, diced
1 green chilli, finely chopped
1 medium-sized pickled beetroot, diced
Sprinkle of herbs (coriander, mint, parsley, whatever you
have at home)

Juice of lemon to taste
Pinch of black pepper
Method
Combine all the ingredients in a bowl, squeeze over the lemon juice to your preference, and add the herbs and black pepper.
Tasty, juicy and very easy to make. This salad makes the New Year’s resolution easier to keep.
